The very best of Madrid’s cuisine

If you’re visiting Madrid, you will surely want to absorb everything you can regarding its culture and soak up like a sponge what the city and region has to offer. In this sense, you cannot miss out on some of Madrid’s typical dishes. Today we are going to talk to you about the most important ones.

A very traditional cuisine

Madrid’s gastronomy is distinguished by its traditional essence, its employment of seasonal food and its influence of other culinary traditions that originate from other parts of Spain. Not for nothing, Madrid has always been a place of pilgrimage and a point of encounter of different regions and nationalities, and because of this, it’s not by chance that this multiculturalism and regional fusion is transferred also to its cuisine.

Another of the most essential dishes are the callos a la madrileña. Together with the callos, they add chorizo, blood sausage, onion and bacon (and some spices depending on taste) and it’s served very hot. It’s a dish to eat with a spoon in winter (the same as the cocido) but if you dare to eat it in this heat, you have our full admiration!

The gallinejas or the red sea bream a la madrileña are other of Madrid’s typical dishes you cannot miss. If you finish it with some sweet fritter as dessert you will be more than satisfied.
